Today I was talking to someone and she was telling me how difficult it is to eat well on a field job. I totally understand. Most of the time you end up eating unhealthy food due to lack of availability of healthy options. That conversation prompted me to post this healthy recipe. Today’s recipe is a health bar which you can carry on the go. Unlike the health bars available in the market, this one is not loaded with sugars. It is totally natural and can be made in a jiffy. So here goes.

Banana Almond Nutri Bars

Ingredients:

1 cup roasted oats

1/2 cup watermelon seeds

1/2 cup sunflower seeds

1/4 cup almonds

1/4 cup roasted flaxseeds

1/4 cup dried prunes, chopped

1/4 cup raisins

2 ripe bananas, mashed

1 tsp vanilla essence

1/2 tsp cinnamon powder

1 tsp almond butter*

Method:

Preheat oven to 140 degrees C. In a large bowl combine oats, seeds, nuts, raisins and prunes. Place banana, vanilla essence, salt and cinnamon in a blender and process until smooth. Pour this puree over the oats mixture and mix well. See to it that all the dry ingredients are evenly moist. Take a greased baking pan and transfer this mixture into that. Press it nicely in the pan and bake for 30 minutes or until firm and lightly brown at the edges. Cool it completely and cut into bars. Store in airtight container and refrigerate.

*Almond butter:

Dry roast some almonds and grind them. If required you can add a tsp of vegetable/canola oil. Grind till you get a smooth consistency. This butter is a healthy alternative to the regular butter. You can skip this in the recipe.

Bake these and enjoy these delicious Banana and almond nutri bars. As the summer vacations are on, you can involve your little ones in baking these. They can then cut interesting shapes of these bars 🙂
